Popcorn fish with honey mustard dip

Here is a super easy recipe which allows me to eat fish without gagging. This serves four fairly hungry people. I would serve this with french fries or potato chips.

Ingredients:

4 Fish fillets (white fish is best, pick your favorite: cod, catfish, tilapia, etc.)
2 beaten eggs
2 tablespoons milk
Flour
1/2 cup breadcrumbs
Oil for frying
1 tablespoon steak seasoning

Directions:

Cut the fish into 1.5 inch cubes.
Mix the milk and beaten eggs together.
Mix the steak seasoning (or whichever spices you like) with the breadcrumbs.
Dredge the fish cubes into flour.
Dip the cubes into the egg wash.
Put the cubes into the seasoned breadcrumbs.
This can all be done in advance. When all your fish cubes are ready, cook in hot oil no more than one minute per side. You can also use a deep fryer but adjust cooking time.
Put the fish on paper towels to absorb excess oil.

Honey mustard dip

2 tablespoons mayonnaise
2 teaspoons (notice I said teaspoon now?) Dijon mustard
2 teaspoons honey
1/2 teaspoon lemon juice

Mix well and refrigerate.

Eat, enjoy, and remember to keep the leftovers which are easily reheated with 30 seconds in the microwave (turning over at halftime).
