Summer in your heart: easy couscous salad recipe

I shared with you another couscous recipe a few months back but this one is just too simple and delicious not to share. You can do it whenever you want and it will feel like summer in your plate.

I discovered this recipe while fiddling with some leftovers I had. You can modify it according to what you have in the fridge. Let your imagination be your guide-dog!

Ingredients

  • Couscous 1/4 cup per person
  • Chopped radishes
  • Chopped cucumber
  • Chopped fried Spam or sausage
  • Shredded cheese
  • Italian dressing (about a tablespoon per person)

As you can see, there’s not a whole lot of quantities above. Just go with the flow, you can’t really go wrong.

“1/4 cup per person” that’s the quantity before you cook it, it expands a lot. Of course, it depends on your appetite, you could go to 1/2 cup per person.

Also, I cook my couscous with a 1.5 ratio i.e. 1 part couscous for 1.5 part liquid. This keeps it more moist. Just boil water, add chicken base and a little garlic salt, and then pour it into your bowl of couscous. Cover for 10 minutes and then fluff it. Let it cool to use in a salad.

Toss the other ingredients in, finish it off with the Italian dressing, and voilà!
