Summer Salad Recipes

Summer has definitely arrived here in Toronto!   The city saw extreme heat alerts issued this week due to temperatures soaring to 35 degrees before the humidity.  Wowzers!  There is nothing quite like a hot summer’s day to make you lazy in the kitchen.  So I thought I would post some great summer salads that are perfect for side dishes, bringing to a BBQ or just taking for lunch.

This month’s salad is a very simple dish, you just need to chop everything really fine, chuck it in a bowl, and toss.  How perfect for these crazy hot days?  Tabbouleh, which is basically a parsley salad, is a Lebanese dish usually eaten by hand with either fresh vine leaves or romaine lettuce cups but you can serve it with warmed pita or flatbread.  It makes a great side to fish or meat and makes a fantastic filler for a pita with some hummus. …
