I know it’s winter right now, except for Aussie Sensation John (hi, John!), so we need to feel like it’s summer. This is an awesome recipe that will put some sunshine in your heart. Well, your stomach anyway 🙂 It’s from Juanita over at Allrecipes.com and it serves two.
By the way, if you don’t have any lobster you can always substitute shrimp.
Ingredients
2 tablespoons butter
1 1/2 cups cooked lobster meat, diced
1 teaspoon seafood seasoning
1 tomato, diced
1/2 avocado, diced
2 cups chopped iceberg lettuce
1/4 cup crumbled feta
Directions
Melt butter in a skillet over medium heat, add lobster, and gently reheat until hot.
Season with seafood seasoning, then transfer to a serving dish.
Toss with tomato, avocado, and lettuce.
Sprinkle with crumbled feta cheese.
Easy, right? You can serve this as a main course or make a smaller portion to be accompanied by a tomato soup.
