Sausage Casserole – Easy and delicious

Sounds weird, doesn’t it? I’m sure if you looked long enough you’d find that sausage casserole was also the title of a best-selling gay porn video. But what I’m offering you today will blow your mind in its simplicity and taste bud-pleasing.

This is a recipe I came up with when I was lying in bed. Counting sheeps wasn’t working and so I started counting calories instead. No, I’m joking. If you ever saw me in a Speedo you’d know I never counted calories once in my life. Anyway, I began thinking about stuff I liked and how I could combine them for a super easy meal.

So I thought sausage… sauce… cheese, what ever could I do with these? The next day, I went all Bill Nye the Science Guy in my kitchen and the result will one day be enshrined in the Smithsonian. It’s that good.

Before we start, you need to do a thorough evaluation of how many guests you intend to feed. The reason this is important is because we’ll do this recipe in two stages, sauce and assembly. You need to make the appropriate amount of sauce. Nothing pisses me off more than dry food, but that’s me.

For the sake of this lesson, we’ll assume you’re cooking for two people.


  • Bechamel sauce
    Shredded cheddar cheese

Bechamel Sauce

By the way, this is my super easy version. I know it doesn’t really conform to French cooking standards but I find it delicious.

  • 1 cup milk
    2 tablespoons butter
    2 tablespoons flour
    1 tablespoon Italian herbs
    1/2 teaspoon salt


  • Microwave 1 cup milk for 1 minute.
    Melt the butter in a saucepan on high heat and when it’s melted add the flour. Mix well until it starts to bubble.
    Add the hot milk, continuing to stir as the sauce thickens. Bring it to a boil (it shouldn’t take long since you’re still on high heat).
    Add Italian herbs, salt.
    Lower heat and keep stirring (otherwise it will stick).
    It’s ready when thick enough (can be between 30 seconds and 10 minutes, depending on your heating element).

Sausage dish

Since we’re doing this recipe for two, a pack of five sausages should be enough. You need fresh sausages, not the kind you put in a hot dog. Go with whatever flavor you like: Italian, herbs, garlic, whatever you want. You can even mix and match if you wish.

  • Remove the casings and cut the sausages into chunks.
    Cook them in a pan until they’re ready.
    Put it all in a baking dish.
    Cover with the hot sauce.
    Top with the shredded cheese.
    Broil until the cheese has melted (takes about two minutes).

You can serve this with any kind of potato you want but since it’s a rich dish some veggies or a salad would not be a bad idea.

If you want to try this a few days in a row, go ahead and use a different sauce. I’m sure it would be delicious with a marinara or Alfredo sauce. Go wild!

If you have leftovers, slap the mixture between two pieces of bread and get this in your panini press. While the bread toasts, the filling will heat up just perfectly. One of the best sandwiches I ever ate.
